Isn’t straw attractive to vermin?
Infestations by vermin (insects and rodents) can be avoided by denying access.

A coating of plaster on all exposed straw is usual adequate to keep animals out, and if they should gain entrance, densely packed straw makes it difficult to move around widely. 

Termites in North America are adapted almost exclusively to a diet of wood and will not bother a straw wall.  There have been documented cases in which termites have moved through straw bale walls to prey on wooden window frames and structural members, so standard precautions should be taken in termite-prone areas.
